Description
Scamorza is a cheese of southern origin, with a very short ripening period and spun paste made from cow's milk
Scamorza can be fresh (with a thin straw-yellow rind, uniform white paste with few eyes and the typical elastic texture) or smoked (brown in color and more compact paste). The flavor of the fresh one is sweet and delicate, with aromatic memories of milk; the smoked one has a more pronounced taste. Excellent for enriching salads or in skewers, scamorza, because of its ability to “spin,” is ideal in cooking in baked preparations that involve light gratin. Another way to enjoy it is in slices of 2 to 3 cm cooked on the griddle or grill, accompanied by chestnut honey.
Thus ideal for filling a large number of dishes, excellent grilled or pan-fried, scamorza keeps for a long time in the refrigerator (up to 20 days, wrapped in a clean dishcloth) and has no waste: even the dark skin of the smoked version is tasty and edible.
