Acetaia Malpighi produces Balsamic Vinegar in the fifth generation since 1850. Under the current management of Massimo Malpighi, only a few thousand bottles per year are distributed worldwide. Traditional Balsamic Vinegar is the smallest part of this production due to its price and limited availability. The art of producing a genuine Balsamic Vinegar according to the ancient tradition has been handed down to the Malphighis. This young Affinato (matured) with cream color cap is a good introduction to the world of Traditional and is one of the first ABTM I tasted in my balsamic career. This Traditional Balsamic Vinegar of Modena D.O.P. has matured for at least 12 years in the wood barrels of Acetaia and each batch has been tasted and classified before bottling.
I always fill up on this drop and use to garnish selected salads or a carpaccio. A real original.
The Acetaia is located south of Modena and offers tourists the possibility of a guided tour.
