The colomba and the panettone, the classic leavened cakes of the festive season, are linked by a shared history. The colomba became popular in Milan around 1930 thanks to Dino Villani, sales director at Motta, the historic panettone manufacturer. In fact, he wanted to use the same machinery as for the first panettone to create an Easter cake. And so the colomba was born, similar to its Christmas cousin in terms of softness and rise.
