Sobrassada ("llonganissa" variant)
Description
A delicathessen of Balearic Islands.
obrassada is made from pork meat. Once the pig is recently slaughtered, the lean meat and the fat are minced, salt and black pepper are added, and it is stuffed into pork casings. It is left to cure for a minimum of 15 days.
