Speck Alto Adige PGI (Protected Geographical Indication) is Galloni's flagship product. Only the finest ingredients are used in the production of our speck. After careful cutting and deboning, the meat is processed by hand with the utmost care. Our smoking process is particularly respectful of the environment and the product. Special climate-controlled rooms and a minimum aging period of 22 weeks are part of our quality standards. This year, it was awarded bronze in the second comparative tasting by the “Consorzio Tutela Speck Alto Adige” (South Tyrolean Speck Protection Consortium).
