Description
The Speck is a typical sauce of South Tyrol, obtained from the thigh of the pig, which unlike other hams is spiced, smoked and seasoned.
The Speck has a very long tradition that dates back to the Middle Ages. Already from 1200 in fact, there are traces of this sausage in the registers of the butchers (then called with the German terms “spec” or “spek” which meant “often” or “fat”.
The Speck arises from the need for farmers to preserve the meat as far as possible. The first to produce it for family consumption were them, the peasants, who slaughtered their pigs in the Christmas period and then produced the Speck and kept it all year long hanging in their cellars.
