As it stands right now, if I create a listing to sell a product, the default currency is Fiat. My suggestion is to change the default to Monero (XMR)

I think XMR as default would be bad, because most people are going to list items here and never come back until they get a sale or they want to buy something. In the time that people are absent, XMR on average will naturally go up in value as fiat goes down from inflation. The result is that old listings in XMR that are not regularly adjusted will end up being absurdly over priced and no one will buy, which reduces the chance of a sale bringing people back to this site and generating activity.
This is why the merchant mode that is in the Monero GUI isn't really all that useful. Because yes you could put the QR code next to your dollar priced item in your online or IRL store, but you would have to constantly regenerate new QR codes as Monero fluctuates in price and that's a pain in the butt.
Fiat is what most people use, and understand in terms of pricing. Visualizing prices in fiat doesn't take away from the value of Monero in the same way that cash doesn't render a debit card useless. Monero still allows for anonymous transactions and transactions at a far lower fee than you could with most payment processers.

This would only change the default currency selected from Fiat to Monero. The user could always change it back by just clicking the currency box and choosing whatever Fiat currency they wish.

make it the default? not a good idea.
even if people chose to view it how the want. prices could keep flapping from crap to great depending on the xmr exchange rate. how long will vendors put up with sales only when the price is great (for the buyer)?
